  • Course description
    Decorative piping will always be an essential element of cake decoration. This short introductory course will enable you to develop skills in piping. You will learn how to make and use royal icing and piping bags, pipe basic linework, shells, borders cornelli and runouts.

    At the end of this course you should know:
        - How to make and use royal icing
        - How to coat cakes and use simple decorative techniques
        - Expert advice on choosing and using equipment
        - How to pipe borders, lettering, runouts
        - The historical background to the subject
        - The principles of colour and design
        - Compiling a personal reference file

    Course Structure:
        You will agree a course outline for the course. Each week the lesson will include mini lecture, demonstrations and small group and individual work on each project. Practice at home is encouraged

    Course resources:
        You will have access to the learning centre at Tooting which has a good selection of reference magazines and books. The teacher has a library of design ideas and samples.

    Assessment:
        Tutor observation and feedback. Individual Learning Plans. Student and peer self assessment. Course file appraisal

        Level 1 course in cake decorating or sugar crafts.
