  • Objectives
    Issues of sustainability and ethical trading impact on the ways in which the food industry has to operate. This course provides graduates with the scientific knowledge and skills needed to apply the principles of sustainability to the procurement of ingredients and equipment, processing, food safety and quality, and distribution within the industry. Students will learn how to implement a sustainable strategy in the context of the food industry. The course will also cover the principles of food processing with options in food safety, food biotechnology and food analysis.
  • Entry requirements
    Normally a lower second class Honours degree in food science, food technology, agriculture, microbiology, consumer studies or similar subjects. Those with relevant professional qualifications or extensive professional experience will also be considered.

    Course structure
    You will take four core modules (one is a double module), two optional modules and a dissertation of around 7500 words.

    Core modules:

    -Scientific Frameworks for Research
    -Principles of Sustainability
    -Application of Sustainability
    -The Food Production Environmen
    -Advanced Food Processing (theory)
    -Research Dissertation

    Optional modules include:

    -Food Biotechnology
    -Advanced Food Analysis

    Assessment
    You are assessed by reports, critical reviews and presentations, and a dissertation and an oral exam for your research project.

    Career opportunities
    Successful completion of this course offers improved career opportunities in the food industry, related advisory and policy-making organisations and regulatory bodies or in consultancy. It is also excellent preparation for further research or study.
